Since Publix has been having a sale on their chicken leg quarters, we have been eating A LOT of chicken lately. My DH said he will probably start sprouting feathers soon. Isn’t he funny?
No one’s complaining though because we have tons of chicken recipes. One of my favorites is one that I really don’t have a recipe for or even a name. It was a creation of mine after eating something like it at a friends house.
So we’ll just call it
Yummy Chicken a la Mikki
2 cans diced tomatoes ( for this one I used Fire Roasted to give it an extra something something)
roasted red peppers
Mix all the ingredients (except the honey and chicken) together in a 9×13 baking dish. Stir to coat.
Place chicken pieces one at a time in dish, dredging in tomato mixture to coat.
Drizzle honey over top of chicken
Cook at 375′ F until chicken is done
This dish is so AMAZINGLY yummy. I serve it either over rice or noodles.
Wow, not I’m hungry for some chicken..
