Do you have one of those meals that when you smell it cooking in the oven and even preparing it, sends you back to your childhood? Well this one is one of those meals. I remember standing in the kitchen numerous times with my mom, rolling broccoli stalks in ham and making cheese sauce.
I now make this one a little different for connivance sake, but it stills Tempts My Tummy!
Ham and Broccoli Roll-Ups
1 (10oz) bunch broccoli spears (or 1lb chopped broccoli), cooked and drained
5 thin slices cooked ham – chop into pieces if using chopped broccoli
1/2 cup mayonnaise
3 tbsp. flour
1/2 tsp salt
1/8 tsp pepper
1 1/2 cup milk
1/3 cup grated Parmesan cheese
fine bread crumbs
Roll ham around broccoli spears or mix chopped broccoli and ham together. Place in shallow casserole dish. In small saucepan, stir mayonnaise, flour, salt, and pepper. Gradually stir in milk. Cook over low heat, stirring constantly until thickened. Add cheese, stirring until blended. Pour sauce over broccoli and ham. Sprinkle with bread crumbs. Broil 6 inches from source of heat for 2 minutes or until bubbly. Serve over rice or noodles.
