All these yummy vegetables did NOT come from my garden. But I did take advantage of some great sales at Publix.
Potatoes at $1.99 for 5lbs –
My DH saw this and immediately thought of Potato Skins.
I’ve never done this before and I have NO idea how it’s going to work out, but we decided to try it anyway.
and we scooped out the potatoes
Next, we flash froze them individually and then packed them in freezer bags. My pictures of that process were deleted.. oops.
Now I’m not sure if this is going to work. I know potatoes get kind of mealy when they are frozen so I’ll be getting back to you on these once we try them out.
As for the rest of the veggies ..
The green beans were YUMMYLICIOUS Sunday night. I love to drizzle olive oil over them , toss with a little salt and pepper, then bake them in the oven for about 20 minutes – tossing around half way through. I think I ate over half the green beans. YUMMY!
Now I’m off to the kitchen because I’m hungry for some reason…
