Are you a New Year’s Resolution maker? Here at our home, we have never really gotten into all that. But when this New Year rang in, it rang in a new lifestyle for us.
There are many different reasons why we’ve chosen to go GF. Health issues, weight issues, and a few others have brought us to this change in eating. After praying A LOT and researching A LOT, I am REALLY excited to see how this is going to benefit my family.
We ‘OFFICIALLY’ started today, but actually had pretty much a full GF week last week. I’ve noticed a little bit of a difference in my energy level –having more that is – which has been exciting.
Tonight was the BIG Test too! Friday night’s are ALWAYS our pizza nights. We were all wondering how GF pizza crust was going to taste. I purchased some GF Pizza crust mixture at our local bakery and made the dough. I was a little nervous with the consistency of it, but once I cooked the crust, it actually looked and smelled really good.
Well, we added all our favorite toppings and let it cook the rest of the way. And you know what?
It tasted YUMMYLICIOUS!!
My family was so excited!!
GF Pizza didn’t taste like cardboard! LOL!
I’m REALLY excited about going GF! Did I already say that? Well, I am.
I think the main reason I’m excited about it is because I’m not having to DRAG anyone into it. EVERYONE is on board.
After doing TONS of research and sharing all my GF knowledge with my family, they all agreed they wanted to try it. YAHOO!! No fixing dinner and hearing “ UGH, GF again??”
I’m going to put my girls to work too. I’m going to let them research their own favorite meals to see if they can find GF recipes for them. Hopefully that will draw them in even more into this new adventure.
I’m sure it’s not going to be easy as we go through this. I’ve already had to deal with saying goodbye to my Wheat thins and Triscuits, but I know in the long run.. it’s going to be worth it!
