For Mother’s Day Gift this year, my wonderful family gave me this very cool griddle pan!
We LOVE to have breakfast for dinner every once in awhile, so I was pleased as punch to pull out my new griddle and start flipping our flap jacks.
I found this recipe in the You Won’t Believe It’s Gluten Free cookbook and it’s they yummiest Gluten Free pancake recipe we’ve had thus far. I using double or even triple it when we make if for dinner so we can reheat the leftovers for breakfast later on during the week.
Gluten Free Pancakes – You Won’t Believe It’s Gluten Free cookbook
3/4 cup rice flour
1 tablespoon baking powder
1/4 teaspoon salt
2 tablespoons sugar
3/4 teaspoon xanthum gum
1/2 teaspoon vanilla extract
1 cup milk
Place all the ingredients in medium size bowl. Mix very well. The batter will become quite thick. Heat griddle pan to medium heat. Pour the batter into desired sized pancakes. Cook until bubbles appear on the surface and the bottom is lightly browned. Flip and continue to cook until lightly browned on both sides.
