Sorry dear blog readers. At this moment in time, my life is not all that exciting.
So for now, your stuck with some of my cooking stories.
I’m still on the hunt for a nice, soft, gluten free hamburger & hot dog roll recipe.
I’ve tried quiet a few that I’ve found online and from cookbooks, but I just can’t find one that I REALLY like.
I did however create my own recipe that is CLOSE to being my favorite. I would LOVE for it to be a little more softer, but for now, it works.
Gluten Free Hamburger and Hot Dog Roll Recipe
( this does make a lot of rolls)
3 cups millet flour
2 cups tapioca flour
1 cup potato starch
4 tablespoons sugar
2 tablespoons dry yeast
1 tsp baking soda
2 tsp salt
2 tablespoons xanthum gum
3 egg whites
4 tablespoons oil
2 tsp apple cider vinegar
2 cups warm milk ( I use lactose free or soy milk)
2/3 cup apple juice
Mix all the dry ingredients together in a separate bowl. Wisk egg whites until frothy, slowly add rest of wet ingredients to eggs. Then slowly add dry ingredients. Mix well.
Take a gallon size plastic bag and spray the inside with spray oil. Then scoop dough mixture into the bag.
Cut the corner end off of one the bags, turning it into a piping bag.
On prepared cookie sheets, pipe out enough dough to make a good size hamburger or hot dog roll. Wet fingertips and shape into rolls.
Cover and place in warm spot to rise for 3o minutes
Bake at 350’ degrees for about 25 to 30 minutes.
Remove from sheets and let cool. Cut and slice as desired.
The Not So Perfect Housewife Tip:
Leveling is very important in baking. It’s nice to have a nice smooth level cup of flour and so I keep a straw in my flour..
You may be scratching your head, but here’s why..
Every time I fill a bag or container with flour, I will stick a straw inside. This keeps me from having to root around for a knife or other utensil to level off my measuring cup.
I just pull the straw out of the flour, level off the flour using the straw, and voila.. I’m level.
