We have gotten REALLY off track with our Gluten Free diet.
Well not all of us. My oldest daughter has been REALLY good at keeping Gluten out of her diet, but the rest of us have really laxed on it.
I just couldn’t help myself. I missed the soft mushyness of our whole wheat bread and the soft flour tortillas. But boy oh boy, I can tell the difference.
I hadn’t realized how bloated and stuffed I felt after eating gluten type food.
None of us are allergic to gluten, but we do have some intolerance’s.
So now we are slowly making our way back to the Gluten Free world. And one good thing.. our local Super Wal*Mart has remodeled and recently put in a small Gluten Free section!! Yahoo!! Gluten Free pasta and snacks for MUCH less than our local health food store!
The other night S was watching the Cooking Channel (our new FAVORITE channel) and saw someone cooking pasta Carbonara. She asked me about it and I said ‘oh yea.. I’ve made that before.. a LONG time ago’. So per her request.. I made some for the whole family and they LOVED it!
I don’t really have a recipe to this. I just kind of put it together so here is what I did.
Already cooked bacon
Gluten Free pasta
(ignore the onion in the picture – I ended up not using it!)
Roast tomatoes in oven ( I used our little convection oven)
Chop one to two ( I LOVE garlic so I used two) garlic cloves
Saute garlic in melted butter
Add bacon and tomatoes and heat through
Combine eggs and parmesan cheese
It’s best to beat the eggs first than add the cheese and mix
Add the cooked & still HOT pasta to the bacon & garlic pan, than pour the egg mixture over the pasta. Mix together well. The eggs will cook while mixing in the hot pasta.
