If your like me, the first few days after Thanksgiving are ‘turkey free’ when it comes to dinners. But usually by day 3 or 4 I’m trying to think of ways to morph my turkey into something delicious.
This year I made Turkey Hash.
I had never made this before so I was thrilled when everyone gave it a thumbs up.
Now I don’t have any official recipe for this one. I basically guessed my way through it.
Saute chopped onions, green peppers, and some minded garlic in 2 tablespoons of olive oil.
Once veggies are soft, add chopped turkey and warm through.
In a separate skillet, melt 3 tablespoons of butter and a fry up homemade (or frozen) shredded potatoes.
Once potatoes are brown, add turkey mixture and heat through.
* You can add spices to turkey mixture – I used salt & pepper and some italian seasoning.
Serve with any of your favorite veggies and enjoy.
