While dating my husband and spending our first holidays together, I got to taste some of the different types of family tradition recipes he grew up with.
One of these family recipes was Carrot Salad.
Now to some of you, this may be familiar.. but I had never had it before.
I can’t say that it a favorite at first, but since one of my 3 in 30 for this month is to add more vegetables to our diet, I figured that I would try it again.
And now I REALLY like it.
My husband tells me that mine isn’t exactly the same as his families, but it was still ‘pretty good’.

4 carrots, shredded
1 tablespoon lemon juice
1/4 cup chopped onion
1/4 cup mayonaise
salt and pepper to taste
In a bowl, combine the carrots, lemon juice, walnuts, salt and pepper. Toss and chill before serving.
I find the longer the salad has to chill, the better the taste
