As I learn more and more about all things vegan, I’m enjoying reading about some really interesting people and the different reasons they choose this lifestyle/diet. At the core of it all, it seems we are seeking a healthier lifestyle and want to take care of not only our health, but those of our loved ones too.
Recently I had the opportunity to receive Mayim Bialik’s new cookbook, Mayim’s Vegan Table. Whether you know her as Blossom from the 90’s sitcom or as Dr. Amy Farrah Fowler from The Big Bang Theory, Mayim Bialik is more than just an Emmy nominated actress or trained neuroscientist. She’s a mom who shares the same concerns as other moms everywhere: wanting nutritious food for you family that they will actually eat.
Mayim, along with prominent pediatrician Jay Gordon, have put together a wonderful cookbook filled with over 100 easy plant-based recipes for breakfast, snacks, lunch, dinners and desserts. All of which are both kid and parent-approved.
The first part of the cookbook is where Mayim and Doctor Gordon help debunk some of the myths about raising a Vegan family. Providing essential information about nutrition, must haves for the pantry, and meal strategies.
Even with all the different research and reading I’ve done already on being vegan, I still found myself underlining and highlighting sections in this book. Reminders like “it’s a commitment to health and well being that necessitates being open to a world of new tastes and textures and flavors.” and since we have to MASS produce livestock to feed our global community, I learned “ We literally use more resources to grow food for the animals we eat than to feed the hungry in our cities, our country, our world.”
A lot of people, like me, don’t necessarily choose to be vegan because of the ethical considerations, but for health and dietary needs. Mayim and Doctor Gordon address that also in the chapter Is Plant-Based Eating Really Better for Us?. Covering topics like problems with dairy and the alternatives to finding protein sources outside the meat/poultry realm, I found a ton of great information here that just reaffirmed to me I’m heading in the right direction.
But beyond all the great information, Mayim’s Vegan Table is packed with great recipes. From Breakfast to Dessert, Mayim’s Vegan Table will not disappoint any vegan cook when it comes to delicious and interesting recipes.
So far, I’ve had fun trying out a few of here soups and salads. The hubster is enjoying that his lunches are getting more and more tastier as I work through this cookbook.
Yesterday I made her Quinoa Salad with Veggies and Herbs. Oh My!! So simple, but sooo delicious!
