The other day I opened my refrigerator door and had one of those moments…
You know the ones… when you see something in or around your life and think
Now this was in no way a life altering or major moment like some of them can be.
No, as usual for my life, it was actually kind of a funny moment.
Standing there… with the refrigerator door wide open, the cool air rushing past, I found myself starring at this:
You see… I can honestly say, that if you had asked me five, no, lets say even 3 years ago today if I would ever soak cashews in water to make a special dairy free cheese and have Almond Milk in my coffee every day.. I would have looked at you like you were on something.
The past two and half years has been eye opening for me when it comes to eating a healthy, plant based, dairy free diet. I’ve learned some amazing information and have found out that there is a DELICIOUS life beyond dairy.. really there is.
Never would I have thought I would be a soaker of cashews, let alone really LOVE the cheese sauce that is made with them, but I do. It’s fun to try new recipes, some work, some don’t, but it does makes life in the kitchen a little bit more interesting.
