PlantPure Nation – A Movie and A Companion Cookbook
As I study, research, and learn more and more about Plant Based eating, I am continually drawn to all of the wonderful writings, movies, and cookbooks by Dr. T. Colin Campbell and his family.
For years, Dr. T. Colin Campbell and his family have been sharing their findings through scientific studies that prove that a whole foods plant-based diet can prevent and even reverse some of the most deadly health conditions such as heart disease, type 2 diabetes, and even some forms of cancer.
I enjoy reading these books because Dr. Campbell writes in such a way that allows the reader to make up their own mind concerning the plant based style – it’s not shoved down your throat or preached at you – it’s just shared in a very informative manner.
Now Dr. T. Colin Campbell, his son Nelson, and group of amazing people have put together a new documentary called The PlantPure Nation that will be released this summer. PlantPure Nation was filmed across the USA and includes world-renowned experts, doctors and authors. The Production team includes Director Nelson Campbell, and Producer John Corry & Writer Lee Fulkerson from the acclaimed documentary film Forks Over Knives.
The PlantPure Nation Cookbook
To coincide with the movies release, Kim Campbell, Dr. Campbell’s daughter-in-law, has taken her own research and developed over 150 plant based recipes. Kim’s background includes research and development, as well as culinary education.
I loved every bit of this cookbook. From the Getting Started section that gives you a crash course, so to speak, for plant based cooking to the delicious Desserts, The PlantPure Nation is another cookbook that makes cooking plant based foods simple, doable, and extremely good for your health.
Which Recipe Did I Try?
Well, I have actually made quiet a few of these recipes so far, but I think my favorite so far is the Quinoa Tabbouleh Salad.
This recipe is perfect for a summer dinner. It’s light, delicious, and a perfect pairing with some baked falafels.

Quinoa Tabbouleh Salad
1 cup Quinoa, uncooked
2 cups water or low sodium vegetable stock
1 Tablespoon smashed and chopped roasted garlic
1 tomato, diced
1/4 cup lemon juice
1 teaspoon red wine vinegar
1 cucumber, diced medium
1/4 teaspoon, red pepper flakes
1/2 cup sliced spring onions
1/4 cup chopped fresh parsley
1 Tablespoon chopped fresh mint
1/2 teaspoon sea salt
1/8 teaspoon black pepper
1. Rinse the quinoa, which can have a bitter taste if not rinsed thoroughly. Add the quinoa and the water to a pot, bring to a boil over medium-high-heat, then reduce the heat to a simmer. Cover and cook until all the liquid is absorbed.
2.Combine all the ingredients, including cooked quinoa, in a mixing bowl, folding to blend well.
3. Store in an airtight container and allow to marinate for at leas 1 hour to obtain optimum flavors. Serve chilled.
